Notes

  • Blending the tomato sauce creates a smooth, restaurant-style vodka sauce.

  • Removing the basil before blending gives you the flavour without large pieces of basil throughout the sauce.

  • Don’t be afraid to season each component — the béchamel and cheese will mellow the seasoning once everything is assembled.

  • Letting the lasagne rest before cutting is important for achieving clean, defined layers.

  • For a lighter version, reduce the amount of cheese and double cream or use a lighter béchamel.
