Step 1

Peel and cube the sweet potato into even, roughly 2-3cm chunks. Add to a pot of cold water with the salt, bring to the boil, and cook for 15-18 minutes, until fork-tender. Once done, drain and leave in the pot, off the heat, ready to mash later.

Notes

Cut the sweet potato into even, roughly 2-3cm chunks so it boils evenly and mashes smoothly. The steak is cooked whole first (same method as the steak frites recipe), then rested and cut into bite-size cubes afterwards — this keeps it juicier than cooking pre-cut pieces. Peas are kept butter-free here to keep the calories down.
